Crestview Inn reopen at JVS

BLOOMINGDALE — Students in the culinary arts program at Jefferson County Joint Vocational School are serving up delights as the Crestview Inn opens its doors once again.

The student-run restaurant reopened last year following a hiatus and will be up and running on Tuesday. Instructor Glenn Zalenski said at least one change is in store to attract patrons.

“The Crestview Inn will be open Tuesdays, Wednesdays and Thursdays from 8:30 a.m. to 1:30 p.m. with no breaks,” he said. “We’re trying something new. I think it will be fun and (the students) will enjoy it.”

The eatery previously operated for breakfast from 8:30 a.m. to 10 a.m. and then lunch from noon to 1:30 p.m., but Zalenski said the longer hours would make the site more accessible to customers who want to dine on homemade dishes prepared by students. The menu includes an array of breakfast and lunch meals, as well as appetizers, soups, salads, entrees and desserts. Dine-in and takeout service are available.

“The kids will manage, take orders and develop the menus,” he added. “This year, we are starting where we left off last year (with the menu) and will add to it. We’ll do as much as we can with a seasonal menu.”

Ideas include pumpkin pancakes, pumpkin soup and squash dishes for the autumn. He commented that Crestview Inn also provides catering and has hosted groups at the building.

Meanwhile, new equipment is being added to assist with operations. Zalenski said new freezer and pot rack will be installed, while a computerized point-of-sale system also is being added.

He has 25 juniors and seniors in his class and many of them are gaining exposure to the industry by participating in upcoming events. About 20 students were slated to attend ProStart Culinary Boot Camp Saturday at the Columbus Culinary School. There, they could learn about managing time and work problems and hone their cooking skills with instruction from actual chefs, but Zalenski said the pupils also could prepare for ProStart competitions this year. ProStart is an industry-driven curriculum that provides real-life experience opportunities and is supported by national and local industry members, educators, the National Restaurant Association Educational Foundation and state restaurant association partners.

Additionally, at least nine students are signed up to take part in the annual Taste of Jefferson County on Oct. 5 at St. Florian Hall, where they will clean dishes and work the event. Zalenski said he hoped to eventually have a booth at the event to show off their culinary skills.
