Some daily things worth appreciating

The days can be speckled with things to appreciate if we allow them to be.

The other evening, for example, we sat on the back porch as evening settled in, not really expecting a free light show but getting one any way.

Are we ever too old to enjoy watching lightning bugs?

The first person to spot one gets a prize – back porch bragging rights.

In the FYI Firefly Department, did you know that there are more than 2,000 different species of fireflies in the world and they can have different color lights – some greenish-blue, some whitish-yellow and others amber?

And the longest-living lightning bug lasts about a week.

All the more reason to appreciate their light-up-the-evening contribution.


The return of Twinkies – now there’s some good news.

Come July 15, a beloved snack is due back on the shelves.

I was a big Ho-Ho and Suzy Q fan in my childhood, back when it really was a treat to have such a treat, because we didn’t get that kind of stuff around the house very often.

I remember having them at end-of-the-school-year occasions mainly, while the rest of the time I had to endure homemade desserts in my lunch bag. Can you imagine my pain and suffering?

I’m sure I’ll scoop up on a Suzy Q, maybe even have one while I let the lightning bugs do their thing.


Speaking of food, I love it when I experiment with a new recipe and it actually hits the spot.

I made a zucchini snack I picked up from a Facebook post the other day. A very simple recipe that goes like this:

Slice a zucchini in half. I used three medium sized ones. Slice off the bottoms. Brush with olive oil and sprinkle with garlic salt, then top with sliced tomatoes, salt and pepper to taste and some mozzarella cheese, but you can use Parmesan cheese or a mixed blend. Bake at 375 for 20 to 30 minutes until soft.

Then I cooked a pound of mild Italian sausage in one skillet and a big container of sliced mushrooms in another skillet with melted butter and some garlic salt.

I scooped the sausage and mushrooms on the zucchini cut in big chunks and made some garlic toast on the side.

Hey, that’s good eating, folks.


Don’t you just love people who always help you out with information you need?

I have a poinsettia on my desk at work – still there from Christmas 2011.

And very, very green.

Can it ever turn red again?

My friend Edna the green thumb told me how to make that happen.

Come Sept. 1, put the plant in total darkness for two months.

Then expose it to light/sun.

The red leaves should make a comeback.

That date, we decided, is one that we don’t wish to come too quickly.

Bad enough it’s almost July 4 this coming week – yikes!
